hazlenut & cacao protein granola

ingredients
1½ c hazelnuts (or any other nuts you prefer)
3T sunflower seeds
3T pumpkin seeds
2T chia seeds
1 serve of milla whey protein powder
1T water
1 egg white
1/4c almond meal
1/4c coconut oil (melted)
1t vanilla extract
pinch of salt
2T cacao nibs
1/2c coconut chips
     
    method
    1. preheat the oven to 170˚C and line a lipped baking tray with baking paper.
    2. add the hazelnuts & seeds in a large food processor and pulse a couple of times to break up the ingredients. add the protein powder, water, egg white, almond meal, coconut oil, vanilla and salt then pulse a few more times until combined.
    3. pour the mixture onto the baking tray and spread evenly. bake for 15 minutes then remove from the oven. stir through the coconut chips and cacao nibs before returning to the oven for 10 minutes.
    4. turn the oven off and remove the tray from the oven. allow to cool slightly before breaking into small chunks. return the tray to the oven with the door slightly ajar until the oven has completely cooled. store in an air tight jar.
